In February of each year

The crop of delicate, five-month-old rhizomes is known as baby ginger -
the pride of the Australian ginger industry. At this stage, the
ginger has developed the perfect flavor profile without forming
of silken glaceed ginger enrobed in dark Belgian chocolate. Fresh
baby ginger, virtually fiberless, carefully candied and cut for dipping,
is meltingly smooth with a subtle peppery bite that dark chocolate sets
